Chicken Divan

 
Have you ever had chicken divan?  It was a favorite when I was growing up.  It is delicious, simple, and low-carb.  I'll teach you how to make it.  Or if you already know how to make it, here's a reminder about how wonderful it is--make it this week!

First, if you have a newborn, strap her on.


Okay now then.  What you'll need:


Mayonnaise, broccoli florets, chicken, cream of chicken soup, cheese, and the juice from a lemon.  Oh, and curry powder.  Do not forget the curry powder.



Lightly steam the broccoli.  I recently figured out that my steamer is not hard to use, so I used that.  But you could also blanch the broccoli (stick it in boiling water for 1 minute followed by an ice bath to stop the cooking).  I'm making a TON of chicken divan so that I have some to freeze.  You don't have to make so much at a time.  



Cook the chicken any way you like.  Bake it, boil it, or stick it on the stove top.  Or heck, you can even just buy a rotisserie chicken from the grocery store and take the meat off the bone.



You can use any part of the chicken you like.  I used thighs, but chicken breast works just as well.

 

In a large bowl, combine a cup of mayonnaise (I eye balled it),



Two cans of cream of chicken soup,



The juice from half a lemon,



And the curry powder.  You need 1/2 tsp of the curry powder.



Now mix it all together.



And add the chicken and broccoli.



And mix that all together.



Grate cheese over the top.



Bake it at 350 F for about 30 minutes, until the cheese is all melted and delicious-looking.



Serve it up by itself or with a salad (and rolls, if you're not counting carbs).

Chicken Divan

Preheat oven to 350.  
Combine 1 lb cooked chicken with 1 lb lightly steamed broccoli.  
Combine with 1 cup mayonnaise, 2 cans cream of chicken soup, about 2 tablespoons lemon juice, and 1/2 tsp curry powder.
Top with grated cheese and bake until cheese melts, about 30 minutes.

  1. Very nicely done. I'm going to have to find a way around the mayo...Dave will boycott dinner, otherwise. Someday I will learn to take pictures as well as you do!
